Entry requirements for your training to work on a super yacht

Either before or after you start your Steward/ess training you will need to have completed a five day STCW 95 Basic Safety Course (Standards of Training Certification and Watch keeping for Seafarers), that is compulsory for all crew on super yachts.

The STCW 95 gives you the minimum standard of qualification required to work on vessels of any size and equips you with a detailed understanding of what to do in the event of marine emergencies.

  • Silver service (in British English) is a method of food service.
  • This usually includes serving food at the table.
  • It is a technique of transferring food from a service dish to the guest’s plate from the left.
  • It is performed by a waiter using service forks and spoons from the diner’s left.
  • In France, this kind of service is known as service à l’anglaise (“English Service”).

  1. Silver service food is always served from the left, drinks and plated meals from the right.
  2. Meals are served to the diner from platters, not plated in the kitchen.
  3. The guest to the host’s right is served first. (Usually a female guest)
  4. Service continues clockwise.
  5. Plates are cleared from the right, glasses from the right; again starting with the guest to the host’s right.
  6. Glasses are stacked in a diagonal to the right and away, with wine (by course) in order, and then lastly, water glass in front.

Silver service is orientated for a right-handed waiter. Thus to serve the food, the waiter stands behind the guest and to the guest’s left, holds or supports the platter with their left hand, and serves the food with their right hand. It is common for the waiter to hold the serving-fork above the serving-spoon both in the right hand, and use the fingers to manipulate the two as a pincer for picking up, holding and transferring the food. This technique requires much practice and dexterity.

In butler service the diner helps himself from a serving plate held by the waiter (butler). 奥运盛典,吸引了全世界的游客和贵宾,也让伦敦的服务业忙得热火朝天,而英式管家这个所有人都不陌生的职业也参与了进来,在各大五星级酒店服务甚至担任管理工作。英式管家到底是什么样的?每天起床后第一件事就是给雇主烫报纸是否只是个夸张的笑话?重庆晨报记者专访英国的管家培训机构贝斯普克公司的负责人,见识了一个真实的英式管家。

完美的仆人

性格温和40多岁最佳

从Bank station地铁站出来就到了伦敦的金融中心。正如它的地名“bank(银行)”,这里聚集了世界各大银行和公司,据本地人介绍,伦敦GDP的30%都由此处贡献,贝斯普克公司的办公室也在此处。

“同时,一个高级的管家还必须有高素质和丰富的知识储备。正因如此,要成为一个高级英式管家需要花费多年甚至十多年的时间,这也是为何我之前说一个管家的最佳年龄应该在40岁以上。”莎拉表示,著名的菲佣只能从事单纯的家政工作,而一个高级英式管家,却是客户的高级个人助理。

因为管家的角色变化和能力提升,人们印象中的“男管家”也逐渐融合了女性。“根据我们培训的情况,15%都为女性。”莎拉表示,英式管家不只局限于性别和简单的服务,英式管家目前已经成为一种服务和能力的标准,所以女性也能够从事这份工作且做得很好,“女性更细心贴心,而且一些雇主因为个人喜好等因素也会倾向选择女管家。”

奥运的身影

负责酒店管理工作

正因为管家越来越全面和高端的服务范围和服务水平,让高级管家的工作不只局限于为一个雇主服务,高级酒店和物业公司都是他们的就职之地。

冯小刚的电影里“楼子里站一个英国管家,戴假发、特绅士的那种,业主一进门儿,甭管有事没事都得说,May I help you sir?一口地道的英国伦敦腔儿,倍儿有面子!”让更多的中国人知道了英式管家这个职业,电影里有夸张和讽刺,如今的管家不仅早已脱离单纯的服务员,也参与到了伦敦奥运的接待工作。

伦敦奥运会期间,世界各地的游客和政要来到伦敦,此时正是考验英国的酒店管理之时,这也让管家们的工作更加忙碌。“我们培训出的很多管家都在伦敦各大五星级酒店工作,而高级管家更是负责酒店在服务方面的整体管理工作,奥运期间他们当然会参与接待VIP的工作或者策划。”莎拉表示,虽然伦敦酒店入住率也比平时高出很多,但这对于那些酒店管理工作者而言,这不会给他们带来太多改变,“他们的工作本来就是如此。不同只是工作量的大小而已。”

中国的市场

英式管家在中国年薪60万

管家的工作专业很重要,随着欧洲金融危机,这些拥有高素质的“好帮手”不得不寻找新大陆。

“我从事英式管家培训工作已经有十多年了,十年前我们的业务很多,但从五年前开始,因为英国的经济开始下滑,人们对管家的需求开始减少,我们的业务量也随之下降,学员开始减少。”虽然欧洲市场遇冷,但来自亚洲的资本,开始热情召唤英式管家。近3年,贝斯普克公司培训的管家人数开始增长,尤其在今年,公司前三个月的学员数量已经是去年的10倍,“近几年,来自中东、俄罗斯和中国的新贵阶层越来越多,他们追求生活的高品质。”

莎拉表示,目前,中国市场已成为该公司重点针对的目标。虽然存在文化差异的问题,但公司会根据客户要求对其培训并“交货”。即便如此,这也无法满足来自中国的巨大需求,“短时间的培训仍然无法解决语言问题,但一些客户不需要与管家交流,他们要的就是这种管家服务带来的感觉。”而据莎拉表示,目前一个在中国工作的英式管家,年收入已经能达到6万英镑,也就是60多万人民币。而同样一个管家在英国,收入则少得多,一年入账3.5万英镑。

The methods

Each hotel housekeeper will need to become familiar with the layout of the hotel she is working in. This includes learning where the kitchen and laundry areas are, as well as the layout of the rooms. A tour of the hotel will be given to each employee as part of the hotel housekeeping training; housekeepers may want to keep notes to remember each designated area. A map may be provided in certain larger hotels with multiple cleaning areas.

Hotel housekeepers will need to learn the appropriate ways to interact with the guests. They need to be familiar with the hotel to answer any questions a guest may have. A uniform is usually provided to a housekeeper; however, if one is not, she will need to learn the expected dress code. This type of training may be given in a classroom setting or reviewed while the housekeeper is going through on the job training. Hotel housekeeping training should include information on what to do if a lost item is recovered in a guest’s room or if a guest leaves any personal items behind. Most hotels have a lost and found area where the items will be stored until a guest recovers them; for more expensive items, such as jewellery, the hotel staff may contact the guest directly. Housekeeping staff should adhere to the lost and found policies and never attempt to return the item directly unless otherwise instructed.

Our Hotel Housekeeping Tips that can go a Long Way

Hotel housekeeping is not the easiest job to take on. Learning some shortcuts and tips will help even the most experienced housekeeper’s day run a bit more smoothly.

1. Start Big

Start with the largest task in the room – the bathroom. This room is generally the messiest and will need the most thorough cleaning. Move on to the next largest task – making the beds. This can be time consuming for one person, which is why most hotels have two people tackle a room at a time. If you are doing this yourself, ask for any tips on how to do it quickly and efficiently. Dusting and vacuuming should be done last since these are the least time-consuming jobs in the room.

2. Focus On Finishing Touches

The finishing touches in a room can make it seem much more homey and cozy for the occupants. Fluff the pillows, organize the dresser (but don’t move personal items), put items away and fold the towels with care. Open the blinds so the morning or afternoon sunlight can spotlight the newly cleaned surfaces. Housekeepers can even leave a friendly but short note letting occupants know what was cleaned and replaced.

3. Smile

Perhaps the most important of all hotel housekeeping tips is to smile. A smile is infectious and demonstrates to the hotel clients that the housekeepers are friendly and reliable. People who can trust the housekeeper are more likely to leave a tip. A smile conveys trust; this is important when you are entering a hotel guest’s personal space to clean. Even on your worst day, give everyone a big smile – it could actually make you feel better.

4. Organize Your Cart

Have your cart organized so cleaning supplies, towels and sheets are easily accessible. Knowing where everything is on your cart will allow you to quickly clean and arrange the room, meaning less time spent searching for supplies. Make sure to keep it organized as you move from room to room.

5. Safety First

It is important to know what chemicals you are working with so as to avoid any dangerous burns or fumes. This is particularly important for anyone who is pregnant. Additionally, when lifting heavy items such as a mattress, dressers or even chairs, make sure to bend and lift with your knees rather than your back to avoid injury. Lastly, carefully clean the bathroom and toilet areas, as these are hotspots for germs and bacteria. Always wear gloves and consider a mask if for more safety.

6. Respect The client or guest

The last but not least of these hotel housekeeping tips involves respect. Respect the guest’s personal space and do not move or touch items that are expensive or seem sentimental or of value. Demonstrate respect by quickly and quietly cleaning the room or respecting the “Do Not Disturb” sign on the guest’s door. Respecting the guest can translate into larger tips for the housekeeper in the long run, but most importantly ensure that they have a pleasant stay.

Being a housekeeper may not seem the most glamorous of jobs but it is a necessity and you are important. Take pride and know that you are key to the running of the home or hotel you are in. If you work hard and do well then they will probably translate into an easier day for you or quick advancement.

For Applicants: training proves commitment. Sometimes an individual who is considering a career change stands at the edge of the metaphorical cliff for some time. This is understandable. Any career change requires courage and commitment. When you finally decide to enrol—and beyond that, actually complete the program you have chosen—it shows the depth of your commitment. Most household employers are impressed that you are committed to your career to the extent that you have invested significant quantities of your time, energy, and finances into it. A committed employee-in-training usually becomes a committed employee.

However, usually the only positions available to individuals without experience are entry-level Housecleaning positions with low pay and not much responsibility. If this is all you want, you may not need training. However, if you want better pay, more interesting responsibilities, and perhaps more respect as a professional, training is essential. We have found that our training is equivalent to approximately 2 years’ job experience. You could start in an entry-level position, work for 2 years and then try to move up, or you could receive training, skip the 2 years and move right into a position that will likely be more satisfactory in terms of salary and responsibility. It is your choice! The applicant without training has received his or her knowledge regarding the care of a home from one of two possible sources: from caring for his or her own home, or from caring for an employer’s home. We have learned that homeowners do not want to train their employees; they expect their employees to come to them ready to work. At the most, employers may provide tips about what they expect in their home. But this does not teach them the proper way to care for a home and its possessions. Without this knowledge, an employee could easily ruin priceless possessions.

The 5 day intro course offer Interior Crew Basic Skills and is a wonderful kick start for your yacht career. “We call it a fast-track course in which we cover Silver Service and all serving types, detailing, yacht guest services i.e. laundry, valet, champagne, wine and bar service, coffee/tea and so on. We focus on attitude and situational awareness (guest awareness) with all the special service skills.” Courses with Bespoke Bureau a are offered in private or small group settings and classes can be customized to cover everything from ironing, packing, inventory and stock, Excel and other computer software and event planning to name a few.

We also offer a variety of silver service courses: Silver Service Foundation, an intense Silver Service course and a three-day Interior foundation. “These courses are designed to teach all levels of steward/esses to have confidence and use creativity to develop their skills. We understand that every single yacht’s interior is different: furnishings, traditions, management etc. However, we want to assist in maintaining a high overall industry standard. These past few years we have seen more and more unqualified ‘green’ yacht crew with previous hospitality experience trying to make it in the world of yachting. With an influx of available crew, it is becoming difficult to hold on to a position when you are evidently out of your depth. We hope to educate junior crew enough about their positions in the short courses to give them a solid starting point to work from.”

Föreställ dig ett år fullt av äventyr, studier vid ett amerikanskt college, vänner ifrån hela världen, resor och arbete med barn i en amerikansk familj. Allt medan du får betalt. Detta är vad au pair-programmet innebär.

Ditt ansvar som au pair

Som au pair i USA får du förtroendet att ta hand om en värdfamiljs barn. Du är ansvarig för barnens välmående och kommer att vara en extra vuxen som bidrar till att familjens vardag fungerar.

Vad gör en au pair?

Au pair-året är en mix mellan ett kulturellt utbyte och arbete. Att vara au pair är ett jobb! Du tar hand om barn på heltid. Du kommer att leka med dem, ansvara för deras säkerhet och hjälpa till med alltifrån matlagning till att köra dem till fritidsaktiviteter. Du förser familjen med kvalitativ barnsomsorg och ser till att barnen är aktiva och stimulerade under dagarna. En del hushållssysslor relaterade till barnsomsorg kan ingå i au pair jobbet.

Vilka arbetsuppgifter som får ingå begränsas till barnomsorg och regleras av amerikanska myndigheter. Du ska inte utföra arbete som inte är relaterat till barnen eller som innebär tungt fysiskt arbete, som till exempel att städa hela huset, ta hand om trädgården eller andra liknande uppgifter. Vårt au pair-program har tydliga riktlinjer som deltagarna måste följa. Några av de viktigaste är:

  • Du får arbeta max 45 timmar per vecka och max 10 timmar per dag.
  • Du har rätt till 1,5 dagars sammanhängande ledighet per vecka, samt ett helt veckoslut ledigt per månad.
  • Under året har du rätt till 2 veckors betald semester.

Som au pair bor och lever du med din värdfamilj, och ni kommer att knyta särskilda band. Var därför beredd på att du kan bli tillfrågad om att hjälpa till i hushållet på samma sätt som de andra familjemedlemmarna.

My year as an au-pair.

 My name is Silvia and I’ve lived in London for 14 month as an au-pair. I started straight after my A-levels without hardly any life experience or houshold skills. Yet this nice family was kind enough to give me this life changing oppotunity. I’ve looked after two girls aged 11 and 13 at the beginning of my year an I’ve had a dog to care for ,as well. The girls are really fantastic. They are  lovely and understanding and try to be helpful wherever they can. Of course ,from time to time they can be a handful when they are in sulk or fight with each other , but generally this isn’t causing any inconveniences.

 

The parents both work full time and coming back in the late evening. Nevertheless they’ve been a great help for me. They explained how I had to cook things and how to use all the labour-saving devices in the right way. Besides ,whenever I made a mistake and unfortunately there were several little slip-ups from my side they never screamed at me but talked in a calm way to me and suggested how I could improve things. They’ve made my stay as comfortable as possible.

 

During my stay things have changed a lot. Not only has my English improved , but I have also changed in my personality. I have become more open and adventurous as London offers a wide range of activities. The number of museums ,parks ,shopping streets and clubs gives you hardly time to be bored. I can say for myself that I’ve seen so many things from castles to English towns and landscape to museums and musicals that I could have never seen  somewhere else.

 

 I’ve also heard a lot of stories about au-pairs who are really unlucky with their family. Then I always thought how fortunate I’ve been to have found this family who has enabled me to have one of the best years in my life!

 

For nothing in the world would I have missed that experience and I am very sad that it’s already over now. I know it’s going to be a very emotional farewell from the family as well as from my friends who I have made within this year.

 

I want to say thank you to Peek-a-boo who showed so much effort to place me with the right family.

I can truly say you did an amazing  job !
