What is Silver service?

  • Silver service (in British English) is a method of food service.
  • This usually includes serving food at the table.
  • It is a technique of transferring food from a service dish to the guest’s plate from the left.
  • It is performed by a waiter using service forks and spoons from the diner’s left.
  • In France, this kind of service is known as service à l’anglaise (“English Service”).

The Sequence of silver service

  1. Silver service food is always served from the left, drinks and plated meals from the right.
  2. Meals are served to the diner from platters, not plated in the kitchen.
  3. The guest to the host’s right is served first. (Usually a female guest)
  4. Service continues clockwise.
  5. Plates are cleared from the right, glasses from the right; again starting with the guest to the host’s right.
  6. Glasses are stacked in a diagonal to the right and away, with wine (by course) in order, and then lastly, water glass in front.

Silver service is orientated for a right-handed waiter. Thus to serve the food, the waiter stands behind the guest and to the guest’s left, holds or supports the platter with their left hand, and serves the food with their right hand. It is common for the waiter to hold the serving-fork above the serving-spoon both in the right hand, and use the fingers to manipulate the two as a pincer for picking up, holding and transferring the food. This technique requires much practice and dexterity.

We also teach table management and all other forms of service. A modification of silver service is known as butler service. In butler service the diner helps himself from a serving plate held by the waiter (butler). Traditionally, this type of service was used on Sunday evenings when the waiting staff had the evening off and the butler helped out at dinner.[citation needed] In France, this kind of service is known as service à la francaise (“French service”). Many people really enjoy the sense of history and even grandeur that comes with Silver Service dining and in the right setting it can really add style to an event or function.

The History of silver service

  • Silver service waiting originates from the manors, country seats and fine houses of the British middle and upper classes of centuries gone by.
  • Referred to by the French as ‘English Service’ or ‘Service Anglais’ silver service actually describes the process of serving diners from a ‘silver’ service dish to the diners plate, rather than the more common practice of serving the plate to the diner.
  • The silver service waiter or waitress must be well acquainted with the appropriate etiquette and technique.

When you contact us, we will initially have a consultation with you. We will then send you a proposal that we see fit. The courses we offer are tailored to meet the requests we receive. If you are not sure what you need then we can also help. A Head trainer will come to you and spend time with the management to check the service standards and style you have. We will point out and recommend ways to improve your hotel’s service.

Training Service Etiquette will keep you going for years.

We include an option to train the trainer or manager. This way you can continue performing, reviewing and educating your team or new team members on an ongoing basis. We can also come back and visit you several times every year to make sure that the level of service is kept high at all times.

How long are the courses?

Our Training Service Etiquette program is delivered on site. You can also send your team to us in the UK if you prefer. We would typically recommend that you let each group of 10-15 have 5-7 days of training each with at least 1 follow-up later. It is important that we (and you) see the students/workers in action after and/or during the training to make sure the highest of quality.
